Our restaurant is an exclusive members-only establishment offering a wide range of dining experiences, including seasonal pairing courses, short courses,

ABOUT OUR WINES
All of the wines we serve are exclusively available at our restaurant and
have been highly praised by our members
Typically, vintage wines require about three hours after opening to reach their peak,
yet their optimal state
lasts for only about thirty minutes
No matter how exceptional a wine may be, its condition depends entirely on how it has been stored—and the moment it is poured does not necessarily guarantee that it is at its best

To address this, we have spent seven years
developing a one-of-a-kind, proprietary technique,
available only through our establishment
After performing disgorgement on the finest vintage wines, we fortify these wines at their peak,
before bottling into private label bottles in Kyoto, Japan.
Hence all our wines becomes MADE IN JAPAN
This allows us to serve wines
that maintain their “peak condition”
far longer than would otherwise be possible
We truly hope that those who love wine will take the opportunity to enjoy this unique experience.

Furthermore, our company invests in numerous barrels and, through the aging process, adds greater depth and unique character to our wines. Some may call this approach "heretical," but we are confident that this challenge will carve a new history in the world of wine.
