GlassHour is a series of wines composed within a defined structure,
shaped through controlled time, hyper-oxidation and balance.
Rather than aging wines towards an eventual peak, we identify peak moments as they form,
then stablize and preserve them before bottling.
This ensures that the first sip is as complete as the final drop.
The label represents different resolved equilibria of a wine - each complete, each intentional, each offering a distinct balance of structure, continuity and depth.

About

Hyper-Oxidation

 

GlassHour wines are shaped using a technique known as hyper-oxidation, where oxygen is introduced deliberately and in precise amounts at the earliest stage of the wine’s life.

In traditional winemaking, oxygen slowly interacts with the wine over many years, gradually softening structure and developing complexity. This process is unpredictable and often requires long aging and careful decanting before the wine reaches its ideal expression.

In contrast, hyper-oxidation guides this natural interaction from the beginning. By allowing the wine to encounter oxygen in a controlled environment immediately after pressing and during early maturation, unstable elements settle early, while aromas, texture,

and color become more refined and stable.

Once the wine reaches its moment of peak balance — when structure, depth, and continuity are fully aligned — that state is preserved through stabilization and bottling.

The result is a wine that does not need time to open, breathe, or evolve in the glass. It arrives already complete, offering a fully resolved experience from the first sip to the final drop.

Each GlassHour bottle therefore represents a captured moment — a deliberate equilibrium between freshness, maturity, and depth.

All of the wines we serve are exclusively available at our restaurant and

have been highly praised by our members

Typically, vintage wines require about three hours after opening to reach their peak,

yet their optimal state

lasts for only about thirty minutes

No matter how exceptional a wine may be, its condition depends entirely on how it has been stored—and the moment it is poured does not necessarily guarantee that it is at its best​​​​​​​​​​​

To address this, we have spent seven years

developing a one-of-a-kind, proprietary technique,

available only through our establishment, for our VIP Members.

After performing disgorgement on the finest vintage wines, we fortify these wines at their peak,

before bottling into private label bottles in Kyoto, Japan.

Hence all our wines becomes PRODUCT OF JAPAN

This allows us to serve wines

that maintain their “peak condition”

far longer than would otherwise be possible
